Monday:


Sweetened Condensed Milk


1/2 C water

1 C dry powdered milk

2/3 C sugar

2 T softened butter (must be real butter, or Red Feather canned butter works great!)

  1. Bring water to a boil.

  2. Add sugar to water and stir until sugar crystals melt.

  3. Pour the sugar mixture into a blender.

  4. Add powdered milk and butter

  5. Blend until completely incorporated

Use in place of a 14 oz. can of sweetened condensed milk.

 

Tuesday:

 

Learn to make foreign dishes as good or better than a favorite restaurant.


Thai Peanut Sauce


1/3 C Olive Oil                                                         

¼- ½ tsp crushed red pepper (optional)

3 crushed garlic cloves or powdered garlic to taste                  

1/3 C Water

1/3 C Soy Sauce or liquid aminos                        

2 Tbsp. balsamic vinegar

1/3 C brown sugar                                      

1/3 C peanut butter (I always use creamy)

Pasta or rice

  1. Add olive oil and pepper in a small saucepan. 

  2. Heat on low until the pepper darkens and the oil is hot. 

  3. Add garlic and simmer for about 1 minute.  (if using powdered garlic combine with oil, do not heat)

  4. Add water and soy sauce, and simmer for 2-3 minutes on low. 

  5. Add vinegar and brown sugar.  Simmer for 2-3 minutes.

  6. When noodles are ready, add peanut butter and mix until sauce is creamy (I whisk it in).

  7. Pour over pasta and cooked chicken or shrimp.  You can also use it over stir-fried vegetables.  Yum!!!

 

Wednesdays:

 

Do you love Italian food but can’t seem to make it as good as a restaurant? Try this simple from scratch recipe.


Italian Salsa


4 tomatoes seeded and chopped into large pieces or 2 cans diced tomatoes drained

1 onion sliced

2 Tbsp. oil

1 clove garlic pressed (1/2 tsp. powdered garlic)

1/4 C green or Italian olives (not black) sliced

olive oil

 

  1. Sauté onion on low in oil and garlic until transparent. 

  2. Add tomatoes and olives and continue cooking until heated through.

 

This is great served over broiled fish or chicken or tossed with pasta. 

 

Thursday:

 

Need a great recipe to use up leftover rice, meat and veggies? One that everyone will love?


Fried Rice


2 C cooked rice

4-6 eggs beaten

2 green onions chopped

Soy sauce or liquid aminos to taste

2 T butter

 

Any combination of: frozen peas, shrimp, ham chunks, cooked carrots chopped, canned corn, or any leftover meat or veggies diced.

 

1. In a frying pan melt butter.

2. Sauté rice and onion until rice is lightly browned, stirring to brown all kernels.

3. Add beaten eggs and stir as they cook.

4. Add cooked vegetables and meat or fish.

5. Cook until all ingredients are heated through.

6. Add soy sauce to taste, stirring as you add, to coat all.


Friday:


Spaghetti Pie


12 oz. cooked spaghetti

1/3 C grated Dried Parmesan cheese

1 pound ground beef or canned beef (optional)

1 jar spaghetti sauce

1/2 Cup shredded Mozzarella cheese

1 Cup cottage cheese

1. Brown meat in a frying pan (better yet use canned ground beef or go meatless)

2. Cook spaghetti and drain.

3. Combine spaghetti, Parmesan cheese, and eggs in a bowl

4. Mix well

5. Press the spaghetti mixture onto a pie plate making a well in the middle Be sure to leave some spaghetti in the center just mound up the sides, like you would a pie crust.

6. Spread cottage cheese in well

7. Combine ground beef and spaghetti sauce

8. Pour sauce mixture over cottage cheese

9. Top with Mozzarella cheese

10. Bake, covered with a paper towel, in microwave for 15 minutes. The foods are all cooked except the eggs so the meal is done once it is hot through.

 

Saturday:


Have fun this weekend, dip ice cream cones, or make a great sundae.

 

Magic Shell


1 1/4 Cups Chocolate Chips

1/2 Cup Coconut Oil (measured when solid)


  1. Melt chocolate chips and coconut oil in the microwave at 30-second intervals.

  2. Allow to sit a few minutes to allow the heat of the oil to melt the chocolate chips.

  3. Stir until smooth. It will be runny.

  4. Place in squirt bottle and store in cupboard until ready to use.
